Versatile Apple Crisp

Want a simple, no-fuss dessert that doesn't require a lot sweat in the kitchen?  Then you will want to add this recipe to your holiday menu!  Every Thanksgiving and Christmas, my mom would make this Apple Crisp recipe growing up, so whenever I make this concoction it reminds me of my childhood (yes, it's that good).  It even provides some nutritional value for a dessert - much more than fruitcake! 😉  Also, it can be tailored to meet a variety of food preferences (gluten-free and vegan) and it can be customized if you are on a food elimination diet for food sensitivities.  Substitution ideas (for those on a LEAP elimination diet): peaches in lieu of apples, blueberries instead of raisins, and quinoa flakes in place of oats.

Apple Crisp (the original version)

Ingredients
  • 10 large baking apples (mix a variety, such as Granny Smith, Macintosh, Rome, etc.)
  • One 6-ounce can unsweetened apple juice concentrate or orange juice concentrate
  • 1 tsp. cinnamon or Apple Pie Spice
  • 3⁄4 cup raisins or dried cranberries
Oatmeal Topping:
  • 1/2 cup flour of choice.  I have used buckwheat flour, oat flour, coconut flour, and whole wheat flour in the past and all recipes turned out great!  Note: if using coconut flour, you may need to add several Tbsp of natural applesauce to add more moisture.​
  • 2 cups old fashioned oats (can use gluten-free oats, if desired)
  • 1 tsp. cinnamon or Apple Pie Spice
  • 1/8 tsp. salt
  • 1⁄4 cup maple syrup or honey
  • 1⁄4 cup butter, ghee, or coconut oil, melted

Combine dry ingredients in mixing bowl.  Add maple syrup (or honey) and melted butter, ghee, or coconut oil and mix just until topping is crumbly.

Thinly slice apples and leave skin on for color.  Place in the bottom of a 9 x 13” baking dish.  Pour thawed apple juice concentrate (or orange juice concentrate) over apples and raisins and sprinkle with cinnamon or Apple Pie Spice.  Spread oatmeal topping evenly over apples.  Bake uncovered in a 350° oven for 30-40 minutes or until apples are tender but not soggy.

If desired, you can top your warm Apple Crisp with milk, ice cream, or yogurt (dairy or non-dairy varieties).  This recipe is an excellent source of soluble fiber from the apples and oat topping, so it is a nourishing dessert that also delivers deliciousness at the same time.  Bon appétit!  🍴
