Veggie "Rice" Pilaf
- 1 lb. riced cauliflower (I buy mine in a bag from Trader Joe's in the refrigerated produce section, or you can DIY)
- 3 large carrots, finely chopped
- 3 large celery stalks, finely chopped
- 1 Tbsp extra virgin olive oil
- 1/4 cup sprouted sunflower seeds (my favorite)
- Basil
- Sea salt
Add above ingredients to a large bowl and mix well. Line a baking sheet with parchment paper and bake at 350 degrees for 15 minutes. Stir ingredients with a spatula and then bake for an additional 10 minutes. Enjoy the nutty, slight crunchy texture of this dish worth making! 😋
